Amber’s bilaos of pancit malabon are a frequent sight at Filipino gatherings. Whether it’s an office party or a sibling’s birthday, the comforting and delicious dishes from this restaurant chain come full of flavor – and at good prices.

But little do many people know that this flourishing restaurant group had very humble beginnings as a garage eatery in Malabon!

Editha Faustino first began to serve food to students from nearby schools at this little spot, before her uncle Manuel “Lolo Daddy” Espiritu offered to let the budding entrepreneur put up a restaurant in Makati. This first branch was established in 1988. Faustino applied what she had learned from her aunt, who owned a catering business.

By developing her cooking skills and offering the now ubiquitous Amber’s pichi-pichi, barbecue, and pancit at affordable prices, the restaurant became a hit with Makati offices and nearby businesses. Gradually, Amber’s expanded into catering, bulk orders, and then opened more branches.

Today there are eight Amber’s branches in Metro Manila, and a total of thirteen stores in Luzon. Though they’ve become a beloved restaurant chain, they remain family-owned and fiercely protective of product quality. Perhaps these two factors are the key to why Amber’s Golden Chain of Restaurants has endured, while other food fads have come and gone!

Amber’s must-try dishes are its umami-laden pancit malabon and pichi-pichi. Amber’s yellow-orange pancit malabon has thick rice noodles and a generous amount of meat and vegetables for toppings. You can choose to have their sticky, sweet pichi-pichi with cheese or niyog (fresh coconut). If you’re new to Amber’s, you simply have to order these!

Other popular items on Amber’s menu include the spaghetti with meat sauce, pork barbecue, lumpiang shanghai, and chicken lollipops. Served in its familiar brown bilaos with Amber’s red and yellow logo, these are welcome additions to any Pinoy celebration!
