VALENCIANA: The Flavorful Heartbeat of Gen. Trias (Culinary Journey)

Years ago, I found myself in a new environment when I moved to Gen. Trias, Cavite. My life then was purely dominated by the stress of corporate life. Each day, I braved the commute from Cavite to Pasay and back, with my mind endlessly spiraling around tight deadlines, endless meetings, and the relentless grind. It was so overwhelming that I didn’t get to enjoy or even appreciate what Gentri has to offer.

But life has a funny way of offering second chances. When I eventually broke free from the corporate chains, a newfound sense of freedom dawned upon me. I began to wander through Gen. Trias, exploring its quaint coffee shops, and indulging in delightful local dishes at nearby restaurants.

One revelation that stood out among the rest was discovering Valenciana. This dish, deeply embedded in the fabric of Gen. Trias’s history and culture, became an instant favorite. I was even surprised to discover that this delicacy has its own celebration. Every December, the streets of Gentri come alive with the vibrant Valenciana Festival.

Valenciana

From simple carinderias to bustling markets and even coffee shops, Valenciana graced menus everywhere, a testament to its popularity in Gentri. I often find myself marveling at how I had missed out on this delicious dish for years.

The Story of Valenciana

Valenciana is a popular rice dish in the Philippines that resembles the Spanish Paella. Since our country was colonized by Spain for more than 300 years, Spanish food and culture have become intertwined with the Filipino way of life. Over time, Valenciana was adapted to the local tastes and ingredients creating different versions in many parts of the Philipines.

In Gen. Trias, Valenciana is a flavorful mix of glutinous rice, chicken, pork, saffron, chorizo, vegetables, spices, and coconut milk. Each region might have its own twist, but the essence of this dish remains consistent across the country.
