Filipinos are familiar with the nostalgia and coziness of Pancake House. While the years have gone by and removed their ubiquitous movie poster décor in favor of bright, airy interiors, the trademark orange continues to give it familiarity.
It feels like Pancake House has always been in the Philippines because it’s practically an institution for delicious breakfast fare any time of the day. In fact, Pancake House was founded in 1974 by three women: Milagros Basa, Leticia Zamora, and Carmen Zaragosa. Their goal was to introduce American pancakes and waffles to the Filipino public – hence the name “Pancake House”.
These fluffy treats were the main inspiration behind creating the menu. As Leticia’s daughter Dada said in a 2004 interview with F&B World, “The success story of Pancake House began in 1969 when an enterprising housewife experimented with her first batter recipe. This experimentation continued until she had assured herself that the batter recipe for the best of all pancakes had been perfected.”
Buoyed by the success of their pancake experiments, they opened their first branch in Magallanes Theater – an environment that inspired their earlier movie poster décor. While many expected children to be immediate fans of their fare, adults were just as delighted by their homey dishes.
With a menu focused on simple, satisfying flavors, it’s no surprise that there are hundreds of Pancake House branches all over the country. While their look and some dishes have changed over the years, this commitment to the original vision and attention to hospitality has remained the same.
