MAOR’FONG: Traditional Way of Eating in Mayoyao (Experience)

During our final day in Mayoyao, both the LGU (Local Government Unit) and the locals promised us a special dinner, showcasing their traditional way of eating. They explained that this tradition, known as Maor’fong, was inherited from their ancestors and often shared among groups or families.

Maor’fong involves gathering around a platter on the floor to enjoy a meal. These platters are typically crafted from natural materials, adding to the authenticity of the experience. For our dinner, they served chicken and vegetables prepared traditionally – first burning off the chickens’ feathers before boiling.

Maor’fong Experience 

In Mayoyao, like in Ifugao, simplicity reigns in cooking, with no additional ingredients or spices used. As we were grouped into small clusters of 3 to 4 individuals, we began our Maor’fong practice. Though we gathered around a table while standing, the customary way was to squat on the floor, reflecting the design and space limitation of traditional Ifugao houses.

Participating in Maor’fong was a delightful experience. Eating with our hands and sharing the meal with fellow travel bloggers enhanced the communal aspect of the tradition. I couldn’t help but notice the straightforward flavor of the chicken, characteristic of Mayoyao and Ifugao cuisine, where meat is boiled without spices or embellishments.

The locals, sensing that we might find the food bland, offered some soy sauce, but they reminded us that their ancestors didn’t use any sauce or spices. I think that’s why people many years ago had longer lives because their food was all natural and organic, without MSG or the popular “Magic Sarap.”

Overall, I enjoyed practicing Maor’fong because I love anything related to food. Haha. Yes, the food was so simple, yet with the soy sauce they provided, I was able to eat a lot. At the end of the day, it’s really about learning and embracing the tradition that made the experience memorable and extra special.

How to experience Maor’fong?

Once you travel to Mayayao, visit the Municipal Tourism Office beside the Plaza and Municipal Hall and they will assist you with crafting an itinerary that will enable you to experience this traditional way of eating. Usually, tours in Mayoyao include cultural immersion. This is what makes the town unique among other destinations in the country.

How to get to Mayoyao, Ifugao

From Manila, take a bus going to Lagawe, Ifugao. From the terminal, vans/buses are going to Mayoyao.

Aside from Lagawe, you can also go via Santiago City, Isabela, and Solano, Nueva Vizcaya. There is public transportation going to Mayoyao. The terminal in Mayoyao is near the market and near the Municipal Hall and Tourism Office. Just walk and visit the Tourism Office for assistance.

From Lagawe to Mayoyao:
– Bus departs at 3:00 PM
– Van departs at 2:00 PM and 4:00 PM

From Santiago, Isabela to Mayoyao:
– Van: 7:00 AM, 1:00 PM, 4:00 PM
– Bus: 8:00 AM, 11:00 AM, 3:00 PM

From Solano, Nueva Vizcaya to Mayoyao:
– Departure at 8:00 AM
